[bojemoi] feat(ollama): upgrade 0.20→0.24, config via Docker config

• Upgrade image ollama/ollama:latest (0.20.0 → 0.24.0)
• Replace inline env vars with Docker config ollama_env (sourced at entrypoint)
• Remove prometheus labels (no native metrics endpoint in 0.24.0)
